"Probably not Carbonara"

Carbonara for me is always a dish where I am free to mix in things as I like. Many people would not call this Carbonara and they would be right, but it tastes good... so... yeah...
 

 This recipe has three parts, Pasta, things you add, and Bruschettas because I was feeling like theres not enought carbs in the pasta...

Pasta

This part is simple, boil your pasta, pull them out before they are fully coocked, strain and rinse. Dont forget to keep some of the pasta water when you strain.

Mix

Onions, Bacon, Mushrooms, Sweetcorn, Garlick

Start by chopping the bacon and put it in a pot, you dont need any oil, the bacon should have enouhght fat, which will render out when you cook it on low heat. I also threw a few pinches of sugar in there, which caramelized nicely with the bacon.

Add mushrooms, garlick and onions in with the bacon and fry till the onions start becoming translucent, season with salt, pepper and oregano then add sweetcorn.

Now, get that pasta water and make sure it's not too hot, a small glass should be enough, mix a couple of eggs with some heavy cream then keep adding the pasta water slowly while mixing. If the water is too hot, the eggs will get scrambled. 

Now it's time to mix everything together in the pot.

Keep the pot simmering to get rid of too much liquid, at the same time the sauce will start to thicken. Here I also add some grated cheese.

 

  Bruschettas

make some garlick paste and spread it on your bread with some olive oil. Then spread some tomato paste, add salt, pepper, thyme. I also sprinkled some balsamic vinegar on top.

Pop them in the oven on 120 or so until they're nice and crispy.

Finish

On the plate, add some more cheese if you like, then sprinkle some parsley, spring onions and a pinch of orange zest.
